Passion, intelligence and creativity are our bywords. We believe that nothing is impossible. We push back limits, believe in the incredible, to create something that nobody considered possible: obtaining a zero alcohol pure wine, without additives, flavors, or stabilizers.

A vineyard with an outstanding characteristics is chosen to bring us small batches of high-quality grapes, finally crafted to become an incomparable wine. These wines reflects the personality of the winemakers, as an orchestra conductor, formed by a small group of people who works with passion to make our dream a reality.

Process Education

Years and years of research makes it possible for us to finally craft a pure non-alcoholic wine. That makes us the first people that can do the one special step in the making of this exclusive wine: dealcoholization.

HARVESTING PROCESS

The best grapes are carefully handpicked to retain its qualities. For red wine, Tempranillo and Merlot grapes are chosen, and for white wine, Airen and Chardonnay.

CRUSHING & PRESSING

The grapes are gently pressed to bring out the best aroma and colors.

FERMENTATION PROCESS

It will be fermented for weeks until the alcohol is measured at 10.5%, and then stored in tanks.

DEALCOHOLIZATION PROCESS

The alcohol contents are separated from other components, leaving pure wine with a natural taste, aroma, and color.

BOTTLING PROCESS

The wines are finally bottle with the help of our advanced technology, which also guarantees the quality.

In order to produce Lussory.
the following steps must be taken into account:

  1. The kind of natural grape is carefully selected. In this case, the Tempranillo and Merlot grapes are used for the red wine, and for the white wine, we have the varieties of Airen and Chardonnay grapes. Besides, the Sparkling variety also comes from Airen, whereas the Rosé is a mixture between Airen and tempranillo.
  2. The grapes are pressed, and the grape skin and vulva grape are separated.
  3. Then it must be fermented for several weeks, until it reaches an alcohol content of 10,5%.
  4. Afterwards it rests in tanks.

5. The process of dealcoholisation is initiated. In the case of Lussory, we use a new system, very up to-date, which consists on a rotating cones process. During this process, the alcohol is separated from the rest of ingredients; moreover, the grape juice without alcohol is also separated, and apart from this, the natural flavours and wine colours are also separated. Then, once these ingredients have been separated, the natural flavours and colours of the new wine obtained are now mixed up with the resulting grape juice.

6. The product is finally bottled inside an aseptic line.
